Ingredients

8 oz. trimmed asparagus cut into eleven 2 inch pieces
- 3/4
cup minced yellow onion
- 4
medium cloves of garlic, pressed
- 1
cup 1 inch slivers of red bell pepper, seeded
Instructions
Sauté asparagus, yellow onion, garlic and bell pepper for
2 minutes in 2 tablespoons of extra virgin olive oil. After 2
minutes, quickly sprinkle 1/4 cup of all-purpose flour and stir
to coat all the vegetables. Add 2 cups 2% organic soymilk (unsweetened),
1/4 cup dry white wine (or substitute with 1/4 water), 3 tsp.
vegetable bullion paste or (3 cubes). Mix quickly. Allow to simmer
for 1 minute, stirring gently, and then remove from heat. Add
¼ cup nonfat plain yogurt and 2 pinches of white or finely
ground black pepper.
Suggestions
This recipe makes 4 cups with a total of 320 non-saturated fat
calories. A ¾ cup serving will yield only 60 fat calories
per serving.
