If dessert is your downfall, Chef Casey Hayden will be happy to help satisfy your sweet tooth. Casey's pastries are getting rave reviews and can be found in restaurants around the valley. He stepped into our kitchen to whip up a Berry Cheesecake and show us why his recipes are making mouths water.

Ingredients
Press in Crust

  • ¾ cup plus 2 tablespoons all purpose flour
  • 2 Tablespoons sugar
  • 1 Tablespoon finely chopped nuts
  • 3 Ounces Melted butter

Cheesecake filling

  • 1 ½ pounds cream cheese
  • 1 ½ cups sugar
  • 2 Tablespoons corn starch
  • 1 ½ cups sour cream
  • 3 eggs
  • ½ vanilla bean, scraped

Berry Filling

  • 1 1/2 cups berries
  • 1/4 cup sugar


Instructions
Press in Crust
Combine Dry ingredients. Stir in the melted butter and combine to a thick paste. Immediately "press in" to bottom of an 8-inch spring form pan. Bake in a pre-heated oven at 350 for approximately 20 minutes or until golden brown. Cool.

Cheesecake Filling
Cream the cream cheese, sugar and cornstarch with a mixer until completely smooth. Add the sour cream and blend until completely smooth. Add the eggs and vanilla bean and cream until the mixture is completely smooth. Pour into spring form pan and bake in a pre-heated 250-degree oven for 1 ½ to 1-¾ hours or until soufflé and firm. Cool completely and refrigerate. Remove from spring form and serve chilled.

Berry Filling
Simmer 15 to 20 minutes until turns into thin jam, then let it cool. It will thicken as it cools.
