Ingredients
Dumpling Filling

  • 1 pound chicken, ground thigh meat
  • 2 ounces water chestnuts, minced
  • 2 ounces Chinese mushrooms
  • 1 cup diced cabbage
  • 1 ounce ginger
  • 1 teaspoon salt

Dumpling Skin

  • 2 Cups Flour
  • 1/2 Cup boiling water
  • 1/2 cup cold water
  • 2 teaspoons sugar
  • 1/2 cup diced Chinese chives
  • 1 tablespoon tapioca starch
  • 1 teaspoon pure sesame oil
  • Pinch white pepper



Instructions
Dumpling Filling
In a bowl, thoroughly mix all the ingredients then chill for 1 hour. This allows the flavors to blend.

Dumpling Skin
Measure flour into bowl and slowly add boiling water, mixing by hand with a spoon. Add cold water into dough until water is mixed in Allow the dough to rest for 30 minutes at room temperature. Roll the dough into little circles and add a dab of the mixture in middle of each dough circle then, form into balls. Put into steamer and steam for about 10 minutes or until cooked.

Suggestions
You can dip them in some red vinegar if you like. Enjoy!
