Instructions
Melting Tips
Melt the chocolate in the top of a double broiler over hot - not
boiling - water. Or place the chocolate in a glass bowl and microwave
at medium power, stirring often until melted. 8 oz. of chocolate
will cover 24-30 berries.
Dipping
The Berries
Hold the Strawberry by its hull and dip it into the chocolate
About ¾ of each berry should be covered with chocolate
leaving 1/4 the bright red berry showing for color. Let excess
chocolate drip off, place wet berry over topping bowl, sprinkle
toppings over berry, then set berries on a baking sheet lined
with wax paper, to dry.
It is best to let the dipped berries dry at a cool room temperature.
Suggestions
Choose firm, red berries. Do not hull strawberries. Lightly wipe
each berry with a damp cloth or paper towel. Important note: berries
must be completely dry before dipping!! Eat berries within 24
hours for best freshness. Keep at cool room temperature.
Note: a strawberry is 75% water, so putting it into the refrigerator
will cause humidity to accumulate on the chocolate giving you
wet berries.
