Ingredients

  • 7 1/2 oz butter cookies
  • 4 oz. raisins
  • 3 apples
  • 4 eggs
  • 1 3/4 oz sugar
  • 1 lemon
  • cinnamon
  • nutmeg
  • apricot jelly


Instructions
Soak the raisins in warm water. Peal the apples and cut into cubes. Place the apples in a deep dish and sprinkle with a teaspoon of each of the cinnamon, nutmeg, and lemon juice.

In a separate bowl, break up the cookies into crumbs, pour in the sugar and add the eggs one at a time. Mix very well then add the apple mixture and strained raisins.

Butter and flour a deep molding and pour the mixture in. Make sure that there are no air pockets or bubbles. Place the molding in a pan with hot water and put the pan and the molding in the oven. Bake at 350 degrees for 11/2 hours. Dissolve the apricot jelly with 2 teaspoons of water. Remove from the oven and let it cool. Brush the jelly over the top of the dessert.
