Filet Mignon with a Red Wine Hunter Sauce

Ingredients

  • 4 ounce center cut filet steaks
  • 1 cup chopped shitake mushrooms
  • 1/2 cup tomato, peeled and seeded
  • TBS Fresh chopped tarragon
  • cups demi glace
  • 1/2 cup red wine
  • Salt and pepper

Instructions
Season filet with salt and white pepper. Sear in very hot pan and brown on both sides. Place pan in oven and cook for 4-5 minutes at 450 degrees. Remove pan from oven. Remove filets and remove any extra grease from pan. Add mushrooms to pan and saute until soft add red wine and reduce by half add demi glace and bring to a boil. Add tarragon and tomatoes and simmer for 2 minutes. Place filets on plate and top with sauce.
