Harissa: Tunisian Meat Marinade
Ingredients

Tbsp. Caraway seeds
- 4
Tbsp. Coriander seeds
- 1
Tbsp. Cumin seeds
- 4
Crushed hot red peppers (Asian or Mexican dry chilies)
- 15-20
Cloves garlic (Minced)
- 1
Lemon Squeeze juice onto mixture
- 2
cups olive oil
- 1-2
tsp. Salt
- 2
pinches Black pepper
Instructions
Toast and grind Caraway seeds and Coriander seeds in a mortar
and pestle. Mix with cumin, peppers, and garlic.
Add lemon juice to mixture. Slowly add olive oil and mix thoroughly.
Toss in salt and pepper.
Suggestions
The sauce is used both as a marinade and a
condiment. It is authentic only if it is fiery.
