Mediterranean Warm Squash Salad

Ingredients

  • 1 Butternut Squash
  • 2 tsp. extra virgin olive oil
  • 1 medium bulb of fennel slivers
  • 1/2 cup red onion slivers
  • 1 T. of sesame seeds
  • 2 T extra virgin olive oil
  • 1/2cup fresh orange juice
  • 2 tsp. fresh lemon juice
  • 2 tsp. orange blossom honey
  • 2 tsp. fresh orange zest (peel) finely minced

Instructions
Peel and cut butternut squash into 1 inch cubes. Steam until tender, yet firm, about 10 minutes.

While squash steams, heat 2 tsp. extra virgin olive oil on medium flame. Saute until tender crisp (about 3 minutes) bulb of fennel slivers, 1/2 cup red onion slivers

Remove veggies from heat to a mixing bowl, and wipe out saute pan with a paper towel. Add sesame seeds and toast on the same medium fire to a fragrant golden brown. (stir often, as with all nuts and seeds, these will burn easily) Put sesame seeds and squash in mixing bowl with fennel and red onion and drizzle with the following dressing: 2 T extra virgin olive oil whisked into:
orange juice, fresh lemon juice, orange blossom honey, fresh orange zest (peel) finely minced

Mix the salad gently to prevent breaking the squash.

Suggestions
Beautiful to present on leaves of butter lettuce as an individual serving or on a platter for family style.
