Pumpkin
Soup

Recipe Ingredients
- 1 Pumpkin (approx. 6 lbs. And roasted about
1 hr. 350 degrees)
- 2 qts. Chicken or Vegetable Stock
- 1/2 C. flour
- 1/2 lb. Butter
- salt
- pepper
- nutmeg
- 1/2 C. Cream
- 1/2 C. Sour Cream
Instructions
Remove rind from roasted pumpkin.
In a 1 gallon pot, melt butter and add flour.
Cook about 5 mins. Until light brown.
Add stock
Boil.
Puree Pumpkin in food processor, pulsing until smooth.
Add pumpkin to boiling soup.
Finish with cream and sour cream whipped together.
Salt, pepper and nutmeg.
