Ingredients
Marinade

  • 1/2 cup of soy sauce
  • 1/2 cup brown sugar
  • 2 T minced garlic
  • 1/4 cup sliced green onions
  • 1/2 cup apple juice
  • dash of sesame oil

Steak

  • 1 Ribeye SteakEggplant Mashed Potatoes
  • 1 eggplant
  • 1-2 potatoes


Instructions
Steak
Mix all marinade ingredients together. Pour over meat and place in refrigerator over night. Grill the steak 5 minutes on each side for medium rare.

Eggplant Mashed Potatoes
Cut eggplant lengthwise and spread olive oil and sprinkle salt and pepper onto each eggplant half. Place on baking sheet and cover with foil. Place in 400 degree over for 45 minutes. Next, remove skins and place eggplant in a blender and puree. Pour blended eggplant into sauté pan and sauté for 20 minutes. Add a little sesame oil, soy sauce, and olive oil to remove bitterness. Next add 1 cup mashed potatoes to eggplant mixture and sauté until all is mixed together.
